Vegetable Soup
This is a great way to use up leftover vegetables or warm up cold bones in the winter.
Get you a big stock pot and get ready to stir
Add your favorite veggies, what your family likes to eat
I use:
1 quart of tomatoes or tomato Juice ( if you want it thicker)
1 half gallon of potatoes ( chopped into cubes)
1 quart of green beans
1 pint of black eyed peas
1 pint of sweet corn
Sliced carrots approx. 1 cup ( use what you have)
2 diced onions
Pour all together in a pot and let it simmer for 20 minutes
Add Salt and Pepper to taste
Of course you can add spices if you like it hotter.
Make sure to keep it stirred so the soup doesn't Scorch on the bottom of the Pot.... then you'll have smoke soup LOL!!
Eat for left overs or can in pints/Quarts for a ready meal later!

Easy Cobbler
Mix together
1 cup of self rising flour
1 cup of white sugar
1 cup of milk
Add your fruit of choice on top ( strawberry, blueberries, peaches)
Bake at 375* for 30 min ( till golden brown on top)
Tip: if you want it more gooey bake 25 min, if you want more bread bake 40 min
Serve with cool whip or vanilla ice cream on top !

Onion Soup Potatoes
Empty out 2 quarts of potatoes ( or boil about 6 medium potatoes)
Drain the Water from Potatoes
place in oven safe casserole dish (9x9 works well)
Pour
1/2 cup of oil on top of potatoes
open
1 package of Onion soup ( Click Here) (amazon link)
Pour out on top of the potatoes then stir to get all the potatoes coated well in Flavor !!! yum!
Bake in the oven at 475 degrees for 30 min, at the 15 min mark stir the potatoes and put them back in the oven.
Sprinkle some parsley on top
and your ready to eat !!
Great quick side dish !

Pumpkin Butter
1 quart of canned pumpkin
1 cup of water
2 cups of white sugar
2 tbsp of all pumpkin spice
Pour all the ingredients into a medium sized pot simmer for 20 minutes or desired thickness
you can substitute the pumpkin spice for all apple spice. We like our pumpkin butter with chunks of pumpkin and a little runny
If you like yours thicker you can puree your pumpkin chunks first and of course simmer it longer, just remember it will thicken as it cools.

Tomato Soup
Once you’ve tried this you will never want store bought tomato soup again ! It’s simple and you probably have all the ingredients already !
Ingredients
2 quarts or tomato juice
1-2 tsp of salt ( to your taste )
1 tsp black pepper
3 large Bay leafs
1 onion large
2 celery stalks
3 TBSP oil
1. Chop up your onions and celery, put 3 TBSP of oil in the bottom of your pot and cook down the onions and celery till translucent
2. Add all other ingredients except tomatos and cook about 10 min
3. Add your quarts of tomato juice and let it all cook and simmer for about 30 minutes!!
Serve with grilled cheese or crackers !!
Tips and tricks!
If you want it creamer add 1/2 cup of milk
If you want it thinner add 1 cup of water or add a quart of canned tomatoes
You can stir with a whisk to make it smoother if you like 🍅

Peanut Butter Cookies
Simple easy cookies !
Be sure to let the kids help too!!
1 cup of peanut butter
1 egg
1/2 cup of packed brown sugar
Mix it all together
Dollop out or roll into balls
Make your fork print
Bake for 10 mins at 350*
