I know what your thinking ... Squash Pie??? Really how can that taste good?
But is is some of the best pie you will ever eat! Once it's mixed up and prepared it's like a lemon custard pie. If you leave out the lemon it's more like just a custard pie.
I have tried many recipes over the years and never could quite get it right but I ran across this one in my grannies cook book and it does not disappoint.
You can use any squash the butter squash will give you the best flavor but I usually just use plain ole yellow squash.
There isn't a whole lot you can do with canned squash besides some squash casserole. I have even found over the years that freezing squash will limit you. It's not really good fried up because it gets too mushy.
Old Fashioned Squash Pie
Ingredients
1 1/2 cup of cooked squash
1/4 stick of margarine/butter
1 cup of white sugar
2 eggs
2 TBS of Flour
2 tsp lemon flavoring or juice
1 tsp of vanilla
Mix all your ingredients together pour in a pie crust and bake for 45 min at 350*
This recipe will make one pie, so if your doing two just double up the ingredients
