Pickled eggs are a great treat or snack! and so easy to make!.

Pickling eggs is a great way to use up eggs too if you find yourself with an abdunce!

Don't waste that pickle juice! use up those scraps
Half a jar of leftover pickle juice

If you're like us, you like to make pickles and the left over juice is still good to use! Pickled eggs are a great way to use up the juice and have a great protein filled snack!

First, let's Boil some eggs ! Your gong to want to hard boil these. Place your eggs in a cold pot of water and turn the heat on high till the water begins to boil you will let them boil around 10 -15 minutes depending on how large your eggs are.

Once they are boiled put them in cool water, to cool down ( peeling is much easier) I also like to roll my eggs on the counter with slight pressure to loosen up the egg shell for easier peeling.

Get all your eggs peeled

After all your eggs are peeled you're going to drop your eggs down into your jar of pickle juice. They will float initially. After 3-5 days they should sink down to the bottom of the jar.

Once they sink down they are ready to eat!! Your can usually do two batches of pickled eggs before you have to throw out your left over juice

Your pickled eggs should hold in the fridge at least 2 months. If you don't eat them before hand !!

I do use dill, bread and butter, our hot pickling juice from jalapeños. They are all good !!

Enjoy!
