These mouthwatering potato cakes are sure to be a hit with their crispy fried outside and delicious filling. These are a favorite around our house and one of my brothers favorite treats. He may be super busy but he always finds a minute to swing by and grab a few potatoes cakes on his way home. Lol. I have even made a batch and gave them as a birthday present and they never disappoint!

Section 1: Ingredients



  • Leftover mashed potatoes 1 cup

  • 1/2 medium onion diced

  • 1 large egg

  • 1 cup of flour to start with ( you may need more depending on how absorbent your leftover potatoes are

  • Salt and pepper to taste

  • Cooking oil or Lard


Section 2: Let's Begin!


Directions

  1. Dump your Mashed potatoes and other ingredients into a mixing bowl. Leave out the salt and pepper.

2. Mix all the ingredients together well, it should be firmer like cookie dough, so if you need to add more Flour now is the time. Sprinkle a little at a time till your mixture is right. It will be sticky.

Go ahead and put your cooking oil in the pan and let it be heating up ( around medium heat) I like to use Lard it gives that nice flavor and browns the crust nicely.


Once your Oil is hot, roll up your batter into balls, then flatten them out. Then place them in the pan



Heat the oil up prior to frying the cakes.

Sprinkle Salt and Pepper on top and fried till golden brown.Flip and repeat!

Once they are done be sure to set them up on a paper towel so the grease can drain off.


Serve as an appetizer or as a side !! If you can wait that long to start eating them. My kids start reaching over the plate and picking off bites here and there before they've had time to cool down ! lol
