Welcome to My Appalachian Home!

Good Morning !!

Do you remember the Sunday mornings waking up to the smell of bacon cooking? Boy I do!. I can remember laying in bed, the light of the day just starting to peak through the windows. I could hear Daddy in the kitchen opening cabinets and putting pans on the stove. I would smell that bacon and sausage! MMM so good!. Daddy always fixed up at least two meats if not three and he would have a pan of fried eggs sunny side up! And biscuits!

We ate high on the hog before church on Sunday mornings. Did you ever use your biscuit to sop up that runny egg and take a big bite followed by a crispy piece of bacon ?

I like to make a big breakfast for my children regularly and I keep the tradition of daddy, making a big breakfast on Sunday mornings. When my sleepy heads make their way to the kitchen with messy hair, grumpy eyes, carrying a teddy bear their whole face lights up when they see mama has fixed a big Ole country breakfast.

You know good food can change your whole mood!

The most important thing when making a big breakfast is timing! You want it all to come together at the same time.

Fresh food helps with taste and flavor! If you ever start cooking and eating fresh foods you won't be able to stand that food from the grocery store again!

My mama always says, " your kids are completely ruint they can't eat anybody's cooking but yours!"Lol! Its true and if mama is out of the kitchen for a few days they are ready for some home cook meals!

I like to start my bacon first, mostly because I will have several pans of bacon so it takes the longest. While my bacon is frying up I go ahead and start my biscuit dough and get those in the oven. Remember you can always turn off your oven a few minutes early and let the biscuits finish out. That way they will stay warm without burning. The last thing I cook up is the eggs. I usually cook those up with bacon grease. Then everything is getting done about the same time and the food is hot and ready to eat.

Don't for get to set out your homemade butter, pumpkin butter, Strawberry perseveres and all the fixings for your biscuits ! Also try adding some fresh cut cantaloupe, strawberries, oranges, or blueberries to your plate to give some color and get all those delicious nutrients your body needs!

Family time is important

Laughing, talking, fighting over the last spoonful of jelly in the jar is some of the best memories you will make and it will be childhood memories your children will cherish.
